Did you know? Southwestern Pennsylvania is renowned for grass-fed lamb. Out of the 160 million pounds of lamb grown in the United States, only two percent is grass fed, and the rainy conditions of our region combined with the variety of grasses make for an extra special product. One of our favorite producers is Jamison Farms in Latrobe, PA. With customers like Julia Child and Thomas Keller, Jamison Farms is known for specialty lamb that is cared for with sustainable farming and decades of experience.
These meatballs are very easy to make ahead of time and are delicious whether cooked in the oven, over the stove, or on the grill. With the warm weather we’re partial to the grill! Paired with an extra herb-y honey yogurt dip, this dish captures some of the best flavors of our seasonal harvest.

There are a few ways to enjoy this dish. Whether wrapped in a pita, over greens, or between a hamburger bun, we prefer a simple plate with plenty of honey yogurt sauce for a true melody of flavors! Enjoy!

Hark! The sour cherries are here. Available for just a short window in Pennsylvania in June and July, we spotted these bright little orbs of goodness at the local farmer’s market this weekend and immediately pounced on this hot ticket fruit! Sour cherries are very delicate and quite tart on their own, so although canned preserves are intended for enjoying summer fruits in the winter, a quick jam meant for eating right away eliminates the worry of damaging delicate hard-to-find fruits and concentrates the flavors in a way that truly celebrates the moment! We used Heritage Select instead of sugar and blitzed the cooked compote in a food processor for a fruit butter like consistency. Adding whatever fresh herbs you have on hand lends a subtle earthiness to balance the sour and the sweet. Yes, pitting cherries is a pain, but we’ve included a fast pitting technique below from The Kitchn. We promise it’s worth it.

This stellar side amps up a weeknight dinner into something truly delicious! The dip couldn’t be easier, and features our Heritage Select Honey. The tangy quark, a fresh German-style cheese, is balanced from the bright mustard and sweet Heritage Select Honey for an addictive dip to accompany roasted sweet potato fries. Feel free to add any of your favorite vegetables to the roasting pan….this dip is so delicious you’ll just want to put it on everything! For the quark, we like Vermont Creamery’s version, found at most grocery stores in the fresh dairy section.

Welcome to the in-between, that time where it’s not quite winter and not quite spring. Here in western Pennsylvania we have sunny spurts with crisp air punctuated by rainy, grey days–mud season. As for eating with the seasons, some local greens will begin to show themselves in a few weeks. Here at Bumbleberry, we’re eagerly awaiting their return! Greens are the perfect vehicle for our new Forager’s Collection Sweet Orange Blossom Honey. Coming soon to our shoppe, this single flower honey is a citrusy, distinct variety that simply sings in a spring salad. Check back to our website soon for the entire release of the single flower Forager’s Collection, including raspberry, blueberry, and avocado blossom honeys! In the meantime, enjoy this seasonal recipe. The orange blossom honey pairs deliciously with creamy avocado, earthy greens, and the last of the winter citrus for a healthful lunch.

Happy Valentine’s Day! It’s the perfect day for sharing sweet treats with those that you love. We spent the past weekend in the kitchen lab experimenting with our Molten Lava Honey Cream. It’s rich, a little spicy, and full of chocolate. The flavor combination lends itself well to truffles, and the intensity of the honey cream means you need less semi-sweet chocolate than usual and still end up with a delightfully decadent chocolate dessert. Instead of Dutch-processed cocoa power, we used raw cacao power to roll along the outside of the truffle for an added “superfood” benefit. Topped with a sprinkle of sea salt, these truffles hit all the right notes for Valentine’s Day!
Molten Lava Honey Cream Truffles
Prep Time: 15 minutes | Start to Finish: 2.5 hours (chills in fridge for two hours)
Yield: 25 truffles
4 oz semi-sweet chocolate chips
1/2 cup heavy cream
2 T. Molten Lava Honey Cream
Cacao power (or cocoa powder)
Sea Salt, for garnish
#6: Roll in cacao power and place on parchment.
#3: Pour heated cream over chocolate mixture.

This got us thinking….what’s healthful, warm, and bright to counter this landscape of grey? Et viola, the Bumbleberry Farms Honey Turmeric Tonic was born. This endlessly adaptable, addictive elixir is a triple threat with the healing powers of honey, turmeric, apple cider vinegar, and ginger. Follow the recipe below and share your results with us here and on Instagram @bumbleberryfarms. Drink up!

When aging bees do jobs usually reserved for younger bees, their brains stop aging. In fact, their brains age in reverse—something that scientists at Arizona State University are trying to tap into to help us slow the onset of dementia. http://fw.to/s0tvj6S
