Baked Honeyed Oatmeal

  • We love this breakfast food, especially when I’m on the go. We make up a pan on Sunday and it nourishes our souls all week. Great warmed cake-style, or placed in a bowl with milk and maple syrup or brown sugar. This recipe is a gift from BumbleBerry friend, Verna C., Pennsylvania.

     

    Ingredients:

    3 c. rolled oats

    ½ c. BumbleBerry Farms Heritage Select Honey

    2 tsp. ground cinnamon

    2 tsp. baking powder

    ½ c. ground flax seed

    1 tsp. salt

    1 c. milk, 2 eggs

    ¼ c. canola oil

    ½ c. unsweetened applesauce

    2 tsp. vanilla

    1/3 c. each of dried cranberries, raisins and walnuts

    2 pureed bananas

    Directions:

    Preheat oven to 350 degrees.

    In a large bowl, mix together oats, honey, ground flax, cinnamon, baking powder, raisins, cranberries, walnuts, and salt. Beat milk, eggs, canola oil, applesauce, bananas and vanilla extract.  Slowly stir together. Spread into a 9×5 baking dish.

    Bake for 40 minutes. Serve warm.
